Christmas Food Tips: What to do With All That Food!!

Nuts:

 

Bowls of them. Mountains of them. Nuts absolutely everywhere. What is it with Christmas, and nuts?

Nut Butter – whizz the leftover nuts with some groundnut oil until smooth & creamy. Add salt and sugar to taste and serve on toast.

Crumble Topping – Rub cubes of butter into flour until it begins to resemble breadcrumbs. Add some sugar, oats & chopped nuts, and scatter the mixture over fruit in a baking tray, and bake.

 

Cranberries:

 

Once you’ve made the sauce you may have some left over. If so, take a look below:

Pork Meatballs – Combine some pork mince, dice onion, pine nuts, chopped cranberries and beaten egg and shape into balls. Brown in a pan then simmer with chopped tomatoes and stock until cooked.
