Christmas Recipes: Cranberry Chocolate Chip Blondies

A quick recipe for a guaranteed Christmas treat that will keep everybody in high spirits!

MAKES: a single 8”x8” pan, 9 to 12 generous squares

PREP TIME: five minutes

COOK TIME: about 24 to 26 minutes, or till completed

TOTAL TIME: about 90 minutes, for cooling

 

INGREDIENTS:

1/2 cup unsalted butter (1 stick), melted

1 large egg

1 cup light brown sugar

1 tablespoon Pure Vanilla Extract

1/2 teaspoon Ground Cinnamon

1 cup all-purpose flour

3/4 cup dried cranberries

3/4 cup semi-sweet chocolate chips

 

DIRECTIONS:

1.      Preheat oven to 180C/350F/Gas Mark 4. Line an 8-by-8-inch baking pan with aluminium foil and spray with cooking spray; set aside.

2.      In a sizable, microwave-safe bowl melt the butter, about 1 minute on high power.

3.      Wait a short while before adding the egg so you do not scramble it. Add the egg, brown sugar, vanilla, cinnamon, and whisk till smooth.

4.      Add the flour and stir till just combined.

5.      Stir in the cranberries and chocolate chips.

6.      Turn batter out into pan, smoothing the top lightly with a spatula.

7.      Bake for about 24 to 26 minutes, or to taste (less time equals softer blondies) A toothpick inserted in the centre must come out clean), or with a couple of moist crumbs, but no batter.

Allow blondies to cool in pan for no less than 1 hour ahead of slicing and serving. They should keep in an airtight box at room temperature for up to 1 week, or in the freezer for up to 6 months.
