Cooking time 1hr.  –   245 calories / serving

  • Popcorn
  • Butter
  • Brown sugar
  • Golden syrup
  • 1/2 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/4 tsp. salt
  • 3/4 tsp. vanilla
  • ½ tsp. baking soda

  1. Pop popcorn and place in a butter coated (or butter spray) bowl.
  2. Prepare two big cookie sheets with a light coat of baking spray.
  3. Preheat the oven to 110 degrees.
  4. Melt butter, brown sugar, golden syrup, ginger, cinnamon, cloves and salt. Bring to a boil, stirring constantly for about 5 minutes. Your syrup should be dark amber-brown.
  5. Pull off heat and add vanilla and baking soda. Your caramel syrup should get very light and fluffy.
  6. Straightaway, pour the frothy brown mixture over the popcorn in the bowl, mixing it well.
  7. Pour the popcorn on the cookie sheets and place in the heated oven for 45 min. Gently stir the popcorn every 10-15 minutes. If you can’t keep an eye on it, the coating on the popcorn will burn. It’s better to take it out early than leave it in too long.
  8. Let it cool down.
  9. Store in an airtight container.
  10. Enjoy!

The combination of gingerbread and popcorn makes a delicious edible gift. Prepare the popcorn beforehand and store in an airtight container. Eat within a week – but probably you won’t be able to resist more than a day to eat it.
