Pork Fillet

Wine or Brandy

Soy Sauce

Sesame Oil

Oyster Sauce

Groundnut Oil

Sugar Snap Peas

Pak Choi

Toss the pork fillet with the wine or brandy, soy sauce, sesame oil (1 tablespoon each) and coat with cornflour. Leave to marinate for 30 minutes whilst cooking the rice.

Mix together the remaining soy sauce with the oyster sauce, ginger & garlic to make the sauce. Bring a saucepan to the boil and blanch the broccoli.

Heat some groundnut oil in a large wok and stir-fry half the pork until cooked, set aside whilst you do the same with the rest of the pork.

Wipe the wok clean and stir fry the broccoli & peas in 3 tablespoons of water for 4 minutes.

Add the pak choi with 1 tablespoon of water and cook for 2 more minutes. Toss with the greens and heat for 1 or 2 minutes more.

Serve with the rice.
